Easy Peasy Butter Chicken
INGREDIENTS
Chicken pieces
Ready made Butter Chicken Masala ( I get from Pick n Pay or Curry Pot at Hayfields)
1 x can Coconut Cream (make sure says CREAM not MILK!)
1 x tub Cream
3 tomatoes
Lemon
Corriander (optional)
Rice
Roti’s optional

LET’S COOK…
I like to marinate the chicken pieces in a bowl for about an hour or 2.
So place in a bowl and mix in the Butter Chicken Masala( my family of 5 I use half the tub) , I then squeeze in a lemon (remove pips!)
Fry the chicken in a pot , you can add a dash of water so it does not stick.
Cook until it is not raw looking.
I then GRATE the 3 tomatoes and add to the chicken.
Mix
Add the Coconut Cream and stir.
Add the Cream and Stir
Then leave to simmer for altleast an hour so the chicken becomes tender!
You can add coriander before you serve.
My kids like it abit runny so they can dip their Roti’s in ( they have with no rice)
You can always thicken with a spoon of maziena and drop of water ( mix in a cup) then pour into the Butter chicken and stir on a low heat to thicken.
I like the Rice and most times a Jasmine or Basmati Rice is a winner!
