Ingredients for a Butternut or Pumpkin Soup
Preheat the oven to 180 degrees.
Place the diced /cut butternut , onion and potato on a baking dish
Season with all Paprika / cinnamon /curry powder /salt and pepper
Drizzle with olive oil.
Bake for 35-40 minutes or until the butternut/pumpkin is soft.
Remove once cooked
Add 1 cup of water , 1Tbl spoon of Bone Broth or vegetable stock and mix until dissolved (in a pot or cup)
Add the butternut mixture and blend all together
Pour the mixture into a pot and the broth mix and slowly stir In your cream
Let the soup simmer for a few minutes
Other OPTIONS – you can add diced crispy bacon / coutons or extra cream to your soup.
