Berry Cheesecake Fat Bombs🍓

I fiddled and faffed with these little gems until I was 100% satisfied with the macros. My end result per bomb:

13g fat
2g nett carbs
1g protein

I battle to always get my fat up without throwing another macro out but these have solved that and I am now well on my way to hitting my fat every day with min effort💫

The Cheesecake:

150g full fat cream cheese
50g butter, melted
1/4 cup coconut oil (I use cold pressed organic)
2 Tbsp erythritol
1 tsp vanilla essence
Beat the erythritol and cream cheese with an electric mixer until soft.
Add melted butter, coconut oil and vanilla and beat again until well combined.
Spoon into a greased mini muffin tray with a teaspoon. Each about 3/4 full. I get 18 bombs.

The Berry Bit
Blitz together 1/2 cup blackberries, 1/2 cup coconut oil and 2 Tbsp erythritol.
Spoon on top of the cheesecake mixture. Sprinkle with a pinch of almond chaff and freeze for about an hour.
Remove from muffin tray with a sharp knife, layer in an airtight container and keep in the freezer for when you need a fat fix🌸

You can change this up and replace the berries with 1 tsp cocoa to make choc-cheesecake🍫
